Well hello there lovely!
I have an awesome recipe to share with you!!
I was craving sushi this past weekend but my circus and quiet restaurants don’t mix. And of coarse, no place delivers near us. So I had to come up with something else. But what?
The kids leftovers were blahhh, I wanted none of the food I just spent my entire morning prepping and frozen pizza wasn’t going to cut it.
After standing in front of the pantry for what felt like forever .. picking at things here and there .. I grabbed a packet of plain old rice. Appetizing, huh?
But wait .. why not create my own sushi?!
I don’t have seaweed but I do have veggies and if I remember correctly there’s some smoked salmon in the freezer.
Ah Ha! There was! Yes. This was working out in my favor.
I looked to see what else we had that would work and I created this beautiful, deliciousness ..
I present to you the Mighty Mom Fit Sushi Bowl ( original .. I know!)
This. Was. Delish! You have to try this!!
- 1 cup rice – I used Ready To Serve from Aldi
- 1 cucumber
- 1 cup edamame, shelled
- 1 cup shredded carrots
- 1/2 avocado
- 3.5 oz fish of choice – I used smoked salmon from Aldi … surprisingly VERY good!
- 6 tbsp plain hummus
- 2 tsp. sriracha
- Cook rice.
- While rice is cooking, cut cucumber and shred carrots (if needed).
- Mix hummus and sriracha together.
- Once rice is done cooking, divide ingredients and assemble sushi bowls to your desired liking!
What a super quick and easy recipe, right?!
And if you used the Ready to Service Rice it makes it even quicker and perfect for those “oh crap, what’s for dinner” nights!
